30/01 - Domaine De Bila-Haut

An intense, forceful, sometimes violent past. Contoured terraces with stony soil and rich geology.

 

Michel Chapoutier set up Domaine de Bila-Haut in the Latour de France area of Roussillon, utilising a combination of stony soils, rich geology and contoured terraces perfectly suited to the spicy Syrah, fruity Grenache and tannic Carignan grape varieties - key Languedoc-Roussillon varieties – basked in the southern French sun and freshened up by the coastal ‘tramontane’ wind.

After several years of reflexion, observation and analysis Chapoutier was able to produce the precious and rare wine'V.I.T' which stands for 'visitare interiore terrae' meaning 'visit the innermost earth' - a part of the mythological motto in finding the philosopher stone, or in Chapoutier's case the search for the best terroir in the Côtes-du-Roussillon. Alongside 'V.I.T' there are also a number of other Sélection Parcellaire (single vineyard selection) wines that are also made at this unique domaine.

Les Vignes, Côtes du Roussillon, White 2020 @ £ 13.50/bottle

This wine exhibits floral and citrus aromas of lemon & grapefruit with smoky notes. It is fresh and aromatic on the palate with great acidity and a lot of freshness on the finish mixed with salty notes, which express the minerality of the wine.

Occultum Lapidem, Côtes du Roussillon Villages, Red 2017 @ £21/bottle

This wine is dominant of graphitic, leather notes with intense aromas of pepper & black fruits. It is rich and dense on the palate with delicate tannins and a great freshness.

Chrysopée, Collioure, Red 2018 @ £44/bottle

The nose is initially dominated by black fruit, blueberry and graphite notes, and then opens onto hints of spices and violet. The attack is full, with a fresh, sophisticated palate of silky tannins. The blueberry notes make way for spicy notes that linger on a long-lasting salty finish with a hint of iodine. Great finesse and purity.

Banyuls, Vin Doux Naturel, Red 2020 @ £18/bottle

Powerful nose, shifting between black fruit and red berries, giving it a lovely freshness, subtly complemented by notes of cocoa. Sumptuous balance between the solar strength of the wine and the fineness of its tannins. It has a great persistency with sweetness which develops greedily.
