A luxurious tasting menu from Pascal Aussignac - 3 or 5 course version available
Duck confit, 2 legs marinated with Guerande salt and slowly cooked in duck fat.
A savoury twist on the traditional Tart Tatin with the caramelized chicory which could work as a side dish or as a starter.
Poached and Roasted Chicken Breast Stuffed with Mushrooms, Chestnuts, Minced pork and Swiss Chards served with a Chicken and Truffle Sauce and accompanied by a side of spelt, baby gem lettuce and trompette mushrooms.
Pascal Aussignac's award winning dish of a silky foie gras flan, topped with a marmite reduction and served with toasted bread.
Our favourite dish of Tarbais beans slowly cooked in duck stock, with Toulouse pork sausage, duck manchon and crispy pancetta.

'Brumaire' is the name for November on the old revolutionary calendar, when the grapes are harvested. A sumptuous golden-yellow in colour. On the nose, aromas of pineapple, lychee, cinnamon and caramelised pears. On the palate, honeyed and soft with further tropical fruit flavours. The acidity is surprisingly fresh and balanced. The finish is intense and lingering.
