Whilst the quartz, pebble and iron soils which are typical of the region lend themselves to vineyards planted with grenache, carignan, syrah and merlot, Aymeric and Maceline have introduced chardonnay and pinot noir grapes during the late nineties to great effect, producing some stunning white, rosé and also sparkling wines.
Wines are aged in wooden barrels and yields are kept deliberately low – the result? Vivacious wines that are soft on the palate whilst retaining spice and strong flavours.
It’s an absolute pleasure to host this dinner and we’ll be releasing the full food pairings soon but book in now as we expect this one will go fast.
